Citrus Sweet Potato & Carrot Roast

So many flavors for such a simple dish. The orange juice adds a nice sweetness to balance out the rich spices. 

INGREDIENTS

  • 2 large sweet potatoes, peeled and cut into 1/2-1 inch cubes
  • 4 carrots, cut into 1/2 inch pieces
  • 1/2 teaspoon allspice
  • 1/2 teaspoon dried ginger
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon salt
  • Juice of 1/2 an orange
  • 2 tablespoons coconut oil or Fatworks Lard, melted
Prep time: 15 minutes
Cook time: 20-25 minutes

DIRECTIONS

STEP 1

Preheat oven to 375° F.

STEP 2

In a medium mixing bowl, place sweet potatoes, carrots, allspice, dried ginger, cardamom, salt, the juice of an orange and coconut oil into a bowl. Mix well.

STEP 3

On a large baking sheet (I like to use parchment paper on top of the baking sheet), pour the ingredients from the mixing bowl onto a baking sheet.

STEP 4

Cook for 20-25 minutes, flipping halfway.
