It's Time To Get Fat. Real Fat!
So many flavors for such a simple dish. The orange juice in this citrus sweet potato and carrot roast recipe adds a nice sweetness to balance out the rich spices.
Preheat oven to 375° F.
In a medium mixing bowl, place sweet potatoes, carrots, allspice, dried ginger, cardamom, salt, the juice of an orange and coconut oil into a bowl. Mix well.
On a large baking sheet (I like to use parchment paper on top of the baking sheet), pour the ingredients from the mixing bowl onto a baking sheet.
Cook for 20-25 minutes, flipping halfway.
