Sauerkraut with Apples, Onion and Sage

Fat and fermentation. Two of the best things for your digestive health and your taste buds. This sauerkraut with apples, onions, and sage recipe goes great with any protein or by itself. Pair the fermented sauerkraut with chicken sausage sautéed in Fatworks Chicken Schmaltz.

INGREDIENTS

  • 1 32-ounce jar of sauerkraut
  • 1 teaspoon fennel seeds
  • 1 tablespoon chopped fresh sage
  • 1/2 teaspoon salt
  • 1 unpeeled apple, diced
  • 1 onion, diced
  • 1 tablespoon Fatworks Lard, Leaf Lard or Schmaltz

Cook time: 20 minutes

DIRECTIONS

STEP 1

Melt cooking fat in a large skillet or pan on medium heat.

STEP 2

Add onion and salt and cook, stirring occasionally, until translucent, about 5 minutes.

STEP 3

Add apple and cook, stirring occasionally another 5 minutes.

STEP 4

Stir in sauerkraut (liquid included) and cook until heated through.

STEP 5

Stir in sage a few minutes before serving.

STEP 6

Add a dash of Tabasco. 

Make it a complete meal and serve with a side of mustard and cooked sausage.
