As part of my 1-2-3 cook recipes (less than five ingredients and three steps), this quick and easy grilled vegetables recipe is perfect for your 4th of July BBQ! Color, flavor, and health-boosting nutrients all in one!

INGREDIENTS

  • Eggplant, sliced
  • Onion, sliced
  • Bell peppers, sliced
  • Cherry tomato
  • Your choice of healthy cooking fat (Fatworks Lard or Fatworks Tallow), at room temp (roughly ¼ cup fat per 1 cup sliced veggies)
Prep time: 5 minutes
Cook time: 15 minutes
Total time: 20 minutes
