Got me some this week and couldn't wait to incorporate Fatwork's Wagyu Tallow into my brisket cook for next Saturday. For yesterday's test drive, I used this alleged wonder fat as a dry rub binder on a beautiful thick prime ribeye and then grilled over flaming coals & couple chunks of hickory until a perfect medium rare. Next I melted a tsp of the tallow over the resting glorious steak, & cut. I picked me out a slice to taste before serving, and YES, was blown away. The elevated rich juicy WOW flavor is better then I anticipated, and now a must use and share (secret ;) ingredient.

I used this fat to mix in with my Nilgai I harvested in Texas. Put in the fridge for a few hours and cut it into chunks and used it to make my ground meat. This product tastes amazing and only used about a 10% fat to meat ratio. It was hands down some of the best ground I have at the moment. Cant wait to use it again on my next animals.

This stuff is gold! Added a tablespoon or so to some plain old grass-fed ground beef and formed a couple of burgers. Tossed them on a flat top and seared ‘em up on both sides and put ‘em between some buns and feasted. They turned that plain old ground beef into one of the best burgers I’ve ever had. Also sautéed up some boring old mixed veggies with this fat and felt like I was at a five star restaurant. Love it.

Mixed the two wagu (USA and Japanese) together with 25% peanut oil so that It would stay “pourable” at room temperature. This way I can store in a bottle and transfer to my deep fryer as needed. This works awesome for french fries (aka freedom fries). The wagu tallow tastes absolutely incredible and has a high enough smoke point to fry at 400 degrees which quickly “seals” the outside of the fry while keeping the inside white, tender and moist. Tallow was the old McDonalds magic for their fries back when they were world class…

I was beyond tickled to find out that Fatworks offered Wagyu tallow! I’ve recently been concerned about the PUFA content of duck fat (believe me, I love the Fatworks duck fat and its smooth liquid melting point), but when I saw the Wagyu tallow, I instantly knew it was the answer to this. I use the Wagyu tallow in my bulletproof coffee (oh, yes!), and for all my baking and cooking needs. It’s so easy to scoop out of the jar and not hard like regular beef tallow. I’m a cattle producer and have several Wagyu crosses that won’t be ready to harvest for another couple years, so it’s great to have a source in the meantime. I’m excited about the wonderful saturated fat and oleic health benefits. Plus it also works as a skin moisturizer

This is the second time I bought a product from fatworks, the first being duck fat . The second time was beef tallow. I use it alongside butter. Or for stews , pho, eggs. It adds a complexity of flavor to what ever you want. Animal fats are good For your health: look it up.
