Adventurous chefs know that Riches come in Niches! Here we have three of our more exotic offerings for those who like to follow the fat less traveled.

Wild Boar Lard (7.5 oz): We are incredibly excited to offer you Fatworks Wild Boar Lard!  The only lard with 420 mg of Omega 3 per serving!  Sourced from truly wild hogs from the forests of Texas! Wild Boar is the lard for serious lard aficionados, inspired Fatworkers, and cooks who like to get WILD in the kitchen. This lard is BY FAR the most flavorful of our pork lard! The best way to describe the taste of Wild Boar Lard is earthy, nutty and, wait for it…bacon-y. Wild Boar Fat is also the most beautiful of our lards, (yes, lard can be beautiful), with deep rich caramel color. Fat from wild boar is great for savory pies, super flavorful sautéing of meats and vegetables, stews, confits, and even wild fries!

Fat Fact: It is estimated that in Texas alone there is a proliferation of nearly two million feral hogs. In order to keep numbers down ranchers employ the services of several trappers in the area who catch the hogs in large boxes and bring them directly to a USDA facility for inspection. Our sincere thanks to Broken Arrow Ranch for the great job they do!

Grass-Fed & Finished Pasture Raised Lamb Tallow (7.5 oz): If you don't know about Lamb Tallow keep reading as this is one baa-d tallow. Some people find that lamb, in general, has a flavor that many in the west find a bit overpowering. But when it comes to the Tallow itself, there is very little "gaminess" and it is in fact a traditional fat with a very subtle, mild (and did we mention, delicious) flavor, making it ideal for sauteing your favorite leafy greens, roasting vegetables and pan-frying any and all meat. Lamb Tallow adds a piquant depth to soups and stews and of course, let us never forget the amazing and spudtacular things Tallow can do to a potato! In fact, any root veggie will roast or fry beautifully with Lamb Tallow. It would be easy to go the "meat and potatoes" route, however, if you are up for a little culinary adventure we suggest baking with Lamb Tallow, only because it makes for some of the most delicious, savory pies! And we didn't even mention the whole new world of Middle Eastern cuisine that is just a jar away with our Grass Fed Lamb Tallow for sale. (This beloved Tallow is even used as a secret ingredient in traditional baklava recipes.) Ok, we could go on and on but as the man once said, we have done introduced it enough.

Grass-Fed Pasture Raised Bison Tallow (7.5 oz): We call this one, "Thunderfat" because it is sourced from the great American Bison, a.k.a the Thunderbeast! Fatworks  is sourced from Grass-Fed (and Grass Finished) Pastured Raised Bison! This is the only USDA Grass-Fed Bison available! Bison Tallow is some seriously "traditional fat" as it was a staple of many Native American tribes for generations. Our Grass-Fed Bison Tallow for cooking has a very pleasant flavor with a rich, deep yellow fat that can only come from grass feeding. This is a great fat for all fat lovers, including Keto and Paleo practitioners. Perfect for sautéing, stir-fries, frying, and even your baking needs. You don't have to be Keto or Paleo to enjoy this tallow! We suggest making delicious savory or sweet pies, just so you can hear people say, "You made it with Bison Tallow!?" Also, for DIY lotion makers, if you mix Bison Tallow with essential oils you've got yourself a powerful emollient. (That's fancy talk for "moisturizer".) Please note: Bison Tallow is unlimited in awesomeness but limited in supply.
