Nothing really compares to organic Chicken Fat Schmaltz. It has the richness of duck fat but with a milder and more aromatic flavor. Schmaltz adds complexity to a variety of dishes that you simply cannot reproduce any other way. Schmaltz is a joy to cook with and is the easiest way to add depth and complexity to leafy vegetables, stir-fries, pan-fried steaks, fish, poultry, soups, stews, baked goods, and for a special treat spread it right on a piece of bread like you would a high-quality butter or fine olive oil. It's no exaggeration to say Schmaltz gives potatoes and other root vegetables a flavor that is beyond anything most of us have experienced. If potatoes could talk to schmaltz they would say, "You complete me!" And yes we know that so some a "true schmaltz" must be rendered chicken fat cooked in onions with salt (and preferably by your grandmother). Not everyone loves onions so our Chicken Schmaltz is an unseasoned version, but if you are a purist and you wish to make the schmaltziest schmaltz that you could ever possibly schmaltz with, we recommend that you pour your Fatworks' Organic Free Range Chicken Fat in a pan, add some diced onions, salt, and sautée until the onions caramelize and then strain the fat into a container and put in the fridge to solidify. Move over coffee…there’s a new morning drink in town! Bone broth with a big, healthy dollop of Fatworks Chicken Fat! I'm a Cantonese chef and I have been using the Fatworks chicken and duck fat for a long time. We use a lot of lard and chicken fat in this cuisine, and this product is very convenient. These oils give me a lot more room to express the flavors that I want to develop when building something complicated. This chicken fat is especially important for depth when stir frying Dungeness crab or lobster. LOL, I didn't realize others buy these for cosmetics. I only use it for cooking and I had no problems with ordering or shipping.

This is my second order of Fatworks. I have used the Chicken Schmaltz twice now to roast vegetables. The first time was cauliflower and onions, and this time it was small Yukon gold potatoes and carrots. Veggies, schmaltz, thyme, basil, black pepper, salt, and fresh garlic. I like to roast in a cast iron pan to get a good browning and caramelization. My orders from Fatworks have arrived quickly, in secure packaging. I am so glad I found Fatworks for this great source of clean, unaltered, healthy fats to include in our diet. I have autoimmune issues, so I am working hard to consume only the best, cleanest, and original sourced foods. It is making a huge difference in my and my husband's health. Thank you Fatworks!

The chicken fat was my favorite of the poultry fats! THe goose, duck and chicken are actually all good, but the chicken tastes the most “neutral” which is prefer. I am on GAPs and I add the chicken fat to my stock right before drinking it. It’s a lovely!

Was making my own chicken fat but it was difficult to get enough while still using the chicken meat that was filling our freezer. The FatWorks product has worked very well and I am so pleased that the scent and taste of chicken is definitely present since the main purpose is to enrich food for a five pound doggie who wasn't eating well. However now she is getting the nutrition she needs and enjoying eating again. So far I haven't used the FatWorks chicken fat for any other purpose but plan to soon. The shipment arrived quickly, was packaged very well so I have been telling others about FatWorks products.

I thought the jars were 16 oz each and so was surprised when they arrived and are 8 oz. Very steep pricing but I am extremely grateful that you have this business and provide a beautiful product. Packaging was great. In the past I got chicken schmaltz at my local health food stores/coop. It has not been on the shelf for a number of years and so out of desperation I paid $50 (w/tax & shipping) for 16 oz of schmaltz. I also used to be able to get chicken skin from local meat counters (to make my own) but now they all receive chicken pre-prepared.

I have a food allergy called "alpha gal" so I cannot use butter. Plant based margarine doesn’t really work for frying but this schmaltz is great. Use it for any frying: eggs, hash browns, chicken, veggies, stir fry anything, etc. If you can use butter, I still recommend using this product as the flavor is unbeatable.

Love the chicken fat. Unfortunately had to stop using it because of the Rosemary Extract. Rosemary Extract is a high oxalate, and it was giving me reactions. Would purchase again if you had an organic pastured line without the rosemary extract.

... so, having already road-tested your Wagyu tallow (thanks Costco!) I decided to get me some schmaltz ... besides, I love your name. Shipment was on time, no damage. A refreshing change from many a food item ordered online. I've yet to do any serious cooking with the product- bit I *have* used it to "spike" other foods ... being an at-times lazy cook, I bought some (gasp) egg drop soup MIX ... a dollop of that good stuff you sold me brought it to life.
